In some personal news, this last week I had the proud pleasure of sharing a big achievement with some new friends. I’m now one step closer to becoming a certified yoga instructor! If you or anyone you know is looking to begin or continue their practice, hit a gal up. I bring this up for a reason, though; I’m not just here to toot my own horn. We celebrated our milestone with one of my favorite traditions: a group potluck, and I found another hit recipe! For a small group of people, we completely overran ourselves with food. There were multiple chocolate chip cookie trays, a couple of large pizzas, some colorful salads, plenty of cheese boards, a plethora of salsas with locally-made chips, and this outstanding dip. There was too much delicious food, entire rooms filled with laughter and connection, and just not enough time.
I highly recommend making this dip for the next gathering in your life, even if you don’t think snacks are required. Showing up to play some cards with your friends? Bring this dip. Helping a friend pack their things to move? Bring this dip. Headed to the park to enjoy your library book and afternoon sunshine? Bring this dip. Want to impress your office friends when you have to schlep back to your cubicle on another manic Monday? Say it with me: bring. this. dip.
The dip is perfectly delectable entirely on its own, and is a delicious neutral canvas so you can really explore toppings to find something fun. I like to offset the creamy tang with something salty or acidic, like my tomato confit, which I shared this past weekend. Olive tapenade would be delicious, and so would any grilled vegetable. Spiced ground lamb + toasted pistachios? Now you’re thinking...count me in! The creamy whipped feta can also make a good base for salad dressing or a quick pasta sauce, too. Don’t forget: you have plenty of options in your dipping vessels, and I’d personally be delighted to see any of the following offered: a toasted baguette rubbed with garlic, a colorful store-bought veggie platter, an assortment of gluten-free rice crackers. The options are endless and this is a perfectly safe opportunity for you to get creative!1
I’ll be honest with you: due to the obnoxious amount of food we had on-hand, there were some leftovers of this dip, but they barely lasted a day back at home with me.2 I enjoyed the remaining baguette slices for a girl dinner, and Dan even used some as a sandwich spread for lunch the next day. We’ll be making this again soon; I love a quick 15-minute recipe for summertime. Here’s to the coming days of summer and plenty of hangs with this dip at your side! ~L

INSTRUCTIONS
Make the dip: Add feta, Greek yogurt, and 1 tbsp of lemon juice to a food processor. Blend constantly and slowly drizzle in 1 tbsp of olive oil. Stop the food processor to check consistency + scrape down the sides of the bowl; if the dip is still a bit chunky and thick, return to blending and slowly add in another tablespoon of oil until desired consistency is reached.
Once your desired dip consistency is met, grate in the garlic cloves and season gently with salt. Blend again to incorporate and adjust the seasonings to your liking. You can always add more, but remember you already started with the salty feta base. Cover with plastic wrap + chill.
Prepare your toppings + mix-ins: work on your tomato confit, buy the pre-made olive tapenade, air-fry your chickpeas or capers. Now is the time to work on this while the rest of the dip chills.
Don’t forget your dippings: thinly slice and toast your baguette, arrange your crackers on a platter, chop your vegetables…whatever you choose!
To Serve: Fill a small, shallow bowl with the chilled whipped feta dip + top with any optional toppings, mix-ins, or garnishes you prepared. Arrange your dipping option on platter or in bowl and serve the dip with a spoon. Enjoy!
Sometimes I just search a recipe online via hashtag to see what else comes up; photos can be inspirational, comments can be helpful (or hilarious), and you can use other recipes as a point of reference to adjust to your pantry or flavor preferences.
There likely won’t be much left to store, but use an airtight container in your fridge. The top of the whipped feta might dry out and crack a bit on top, but it’s not bad. If you prefer, drizzle the top with some olive oil and give it all a quick mix. Good as new!
Don’t settle for the pre-crumbled stuff; spring for the full block, in water if possible. This stuff is fresher, tastes better, and blends more easily for this dip.
My personal favorite + the perfect size? This bad boy, who can always be found in my fridge…he’s a multitasking workhorse!
Love it! Great idea to air fry edamame.
